Peter Vaughan, an award winning chef and member of the Royal Academy of Culinary Arts, heads our professional cookery course team. He has worked in a variety of fine dining, Michelin starred establishments, as well as running his own restaurant, and he is known for his infectiously enthusiastic teaching style that always leaves you inspired,
Nowadays, as well as the cookery school, he has his own event catering business where candidates can gain work experience.
Catherine Maxwell also worked in fine dining establishments, at one stage running the pastry kitchen in Le Gavroche, the Michelin-starred restaurant run belonging to with Michel Roux Jnr. She is an experienced and well-qualified chef and teacher who is also a Fellow of the Royal Society for Public Health.. She is accredited to teach food safety & hygiene and nutrition at all levels. Her teaching style is calm, clear and inspires confidence.
