Eating out...with a difference

To celebrate the spring, Vaughan’s Kitchen & The Ridgeway Barns welcome you to a barbecue feasting evening celebrating the cuisine of The Deep South of America. 

In Memphis there is a month-long festival - Memphis in May - that celebrates world class American Deep South cuisine, music & culture. The Memphis in May festival was founded over 48 yrs ago in 1978 in downtown Memphis, Tennessee, on the banks of the Mississippi. It is also the home to the world championship barbecue contest which is rated as the most prestigious BBQ competition in the world. 

We will be using spring produce grown just a few miles from The Ridgeway Barns and cooked over locally produced Slate Hill charcoal. Along with live slide guitar music by our super talented musician Andrew Hurst, Chef Peter Vaughan will talk you through each course. We look forward to welcoming you to a fully immersive & open fire dining experience to officially celebrate spring 2026.

On arrival 

Vaughan’s strawberry and rhubarb lime fizz (non-alcoholic on request)
Welcome snacks of Colonel Sanders-style Hush Puppies

Mississippi ‘sin’ dip 
Barbecued English asparagus & pickled spring Wiltshire carrots 
Alabama corn bread with chipotle 

 

Main course

Rotisserie of hickory smoked beef brisket, wild garlic chimichurri 
Memphis-style Wiltshire pork ribs 

For Vegetarians 
Jerk barbecued cauliflower with smoked cheese gratin
Fire baked courgettes & halloumi with Tennessee marinade & chimichurri  

Sides 
Argentinian smashed barbecued potatoes 
Fennel & radish New Orleans slaw 
Ridgeway ‘Ranch style’ dressing 

 

Dessert

The original Mississippi mud pie
(Vaughan’s Kitchen & Cookery School have the original recipe and it’s nothing like the ready made frozen and overly sweet version that often gets served in UK)
Maple caramelised pecans, sour cream 

 

Hot drinks & toast your own marshmallows on the courtyard open fire
