Amy is a classically trained professional chef who found her way into healthy cooking in 2004 when training to be a holistic health counsellor at the Institute of Integrative Nutrition in New York.
She has worked for several of the UK's most respected all-natural chocolate companies and then as Senior Sous & Pastry Chef to the world renowned Executive Chef, Chad Sarno (co-founder of Wicked Healthy).
With over 20 years as a professional chef and a decade specialising in all-natural chocolates and desserts, Amy offers a nourishing experience of learning starting from wherever you are, in terms of knowledge and skill.
What will I learn?
- The chocolate journey - where it comes from, how it is processed commercially and how an artisan chocolatier prepares chocolate in small batches.
- Tempering - this is what gives chocolate its shine and snap.
- Chocolate bars - the group gets to design and make them using a professional mould.
- Pralines - set into silicone moulds and dipped in chocolate.
- Truffles - easy to make with 4 main ingredients.
- Making chocolates at home.
What happens on the day?
- The class is a communal cooking session where everyone works together.
- All ingredients, equipment and aprons will be supplied PLUS we will do the washing up!
- The small group size enables you to get plenty of attention, whether you want to be helped or stretched. You will be working in a friendly and sociable environment.
- You will have some of the goodies to take home.
All the chocolates are dairy, wheat, gluten and refined sugar free.
