Back in the day, Peter worked in France where he was in charge of the pastry kitchen in a top class establishment. He learned a lot about the French way of doing things, as well as some of the more colourful expressions that the language had to offer!

Subsequently he worked at The Chewton Glen Country House Hotel & Spa at the same time as James Martin; Peter was a 'larder chef' whilst James was in the pastry section. He has stories about their exploits, both in the kitchen - and out socialising... 

This session will help you master the skill of producing high end savoury and sweet patisserie items. It will help you extend your pastry skills and confidence.

What will I learn to cook?

  • Choux pastry from which you will make: Chocolate Eclairs; Coffee Craquelin Profiteroles
  • Creme Patisserie: professional tips and tricks for the perfect finish
  • Pâté Feuilletée (leaf pastry) from which you will make: Classic Tarte Tatin; Tarte de Tomate - a dish Peter and  James Martin created that featured on the Michelin-starred Chewton Glen Restaurant menu when they worked there; Torsadas - French equivalent of cheese straws

What happens on the day?

  • The class is a busy hands-on session.
  • All ingredients, equipment and aprons will be supplied PLUS we will do the washing up!
  • The small group size enables you to get plenty of attention, whether you want to be helped or stretched. You will be working in a friendly and sociable environment.
  • Lunch will be some of the food you have prepared but there will also be some goodies to take home.

This class can be made suitable for vegetarians and gluten free. Let us know at the checkout when you book.
