Naturally everyone dreams of Mediterranean sunshine & cuisine when the nights get longer and chillier. We can help you bring this dream into a culinary reality by introducing some simple & authentic Spanish recipes and dishes into your weekly repertoire.
Peter Vaughan has worked with Spanish chefs in the past and has learnt many tips and techniques that will help you make authentic Spanish food. A graduate of the Royal Academy of Culinary Arts, Aimee Applegate trained with him for 3 years and inherited his passion for this cuisine, which is rich and vibrant. No wonder a restaurant in Spain often reaches 'best in the world' each year.
This will be an immersive experience into what simple & inexpensive ingredients such as leeks , almonds, peppers & tomatoes, have to offer and how beautifully they marry together with some culinary skills and attention.
You will be taking home your ‘Burnt Basque cheese cake’ which was created in a pintxos bar in San Sebastian’ The Food Capital of Europe’. The dish was barely heard of in UK, until food writer Nigella Lawson brought to our attention on our TV screens. It is unique and delicious.

- Burnt Basque Cheesecake
What happens at the session?
- The class is a busy hands-on experience.
- All ingredients, equipment and aprons will be supplied PLUS we will do the washing up!
- The small group size enables you to get plenty of attention, whether you want to be helped or stretched. You will be working in a friendly and sociable environment.
- The session will finish with a meal (including wine) and you will have some goodies to take home.
