Having worked with Italian chefs in the past, Peter Vaughan has learnt many tips and techniques that will help you make authentic Italian food.
He loves the vibrant colours and tastes that conjure up sunshine and happiness. The dishes are simple and use a range of quality, easily accessible ingredients but, with professional guidance, you can turn them into an amazing meal.

What will I learn to cook?
- Wild mushroom & truffle arancini - making risotto then arancini, which translates as little oranges
- Tuscan panzanella salad - a peasant salad of seasonal ripe ingredients using up stale bread
- Ragu di Bologna - traditional Italian meat sauce using the principles of soffrito, the 'holy trinity' of Italian cooking
- Perfect pannacotta - with just the right amount of 'wobble'
What happens on the day?
- The class is a busy hands-on session.
- All ingredients, equipment and aprons will be supplied PLUS we will do the washing up!
- The small group size enables you to get plenty of attention, whether you want to be helped or stretched. You will be working in a friendly and sociable environment.
- The session will finish with a meal (including wine) and you will have some goodies to take home.
